Es un plato que nos apasiona! Poned la tripa a hervir con las hojas de laurel y a\u00f1adir un poco de sal. Cuando ya lleve hirviendo 30 minutos, a\u00f1adiremos el &#8216;Cap i Pota&#8217; para que no se nos deshaga antes de tiempos.<\/p>\n<p>A continuaci\u00f3n prepararemos el sofrito. Primero a\u00f1adiremos los tacos de jam\u00f3n ib\u00e9rico y el chorizo para dorarlo un poco. Seguidamente la cebolla cortada, la picadura de ajos y los pimientos verdes. Pasados unos minutos, el tomate triturado y la pimienta roja. Despu\u00e9s podemos a\u00f1adir el vaso de vino blanco. Para tener un buen sofrito dejaremos que haga chup-chup durante unos 15 minutos. Al acabar, incorporamos los garbanzos cocidos.<\/p>\n<p>Pod\u00e9is a\u00f1adir unas cucharadas del caldo de la tripa para acabar de ligar la salsa. Sal\u00e1is un poco y prob\u00e1is si est\u00e1 al gusto. Tambi\u00e9n pod\u00e9is a\u00f1adir una cucharada de az\u00facar para rectificar. Finalmente, incorporaremos la tripa para acabar de ligar todos los ingredientes durante unos minutos.<\/p>\n<p>Antes de servir, es mejor dejarlos reposar un d\u00eda a la nevera.<\/p>\n<p>Prob\u00e1is este plato tan gustoso a Restaurante Can Carola! Los callos, se pueden marinar con un vino tinto potente.
